Chef’s celebrating Autumn

Chef Damien Andrews’ new menu celebrates fresh, seasonal ingredients with a strong emphasis on local produce. Each dish reflects his passion for Mediterranean cuisine while incorporating subtle exotic influences that elevate the flavors. Whether it’s a hint of Asian flair or a tribute to comforting South America recipes, creativity is at the forefront.

 

What makes this menu truly special is the focus on quality ingredients: meats slow-cooked for 48 hours, apple chutney, ancient vegetables like sunchoke and rutabaga, and italian fregola sarda, a delightful homage to comforting childhood dishes. 

 

The Chef is dedicated to reimagining unexpected flavor pairings, think elderflower oil to enhance a dish or carrots paired with a sunny note of mandarin.

A slow-cooked pork confit, braised for 48 hours, served with a velvety Jerusalem artichoke purée and refreshing braised fennel with mint.


Or, savor a delicate pak choi ravioli, this Chinese cabbage that offers a hint of wasabi, softened by a 24-month-aged Parmesan, and topped with a light black olive foam.
